Raised Rolls - Very Fine

 
 

from Florence Southall

 
  Florence Virginia Leatherbury was born in 1887 in Virginia. She married Hafford Casson Southall.  
 

1 cup flour
1 cup mashed boiled potates
1/2 cup lard
1 cup milk & spud water mixed
1 egg yolk
1/2 cup sugar
salt to taste
1 cup compressed yeast dissolved in 1/2 cup luke warm water

Mix flour, lard, potatoes, sugar, salt and egg- then milk - then yeast.

Set aside to rise for 2 hours

Make into a soft dough by adding 5 or 6 cups of flour and set to rise again 2 hrs.

When raised, shape in rolls, put 2 small pies of dough in muffin tins

let rise 1/2 hour & bake about 1/2 hr

 

Taste and health benefits of Butter, Shortening (Crisco/Spry), and Lard are still hotly debated. Aunt Pit wasn't afraid of any of them.
